Beer has such a diverse range of flavours, different flavour characteristics can combine to create balance. For example high bitterness may be balanced by sweeter, smoother or more fruity characters that make the beer seem less bitter. Greater perceived balance helps make beer more drinkable.
ALL BEER Flavour Reference Cards indicate the intensity of 25 specific flavour characteristics and the level of balance within the beer. Every Aroma, Taste or Mouthfeel character that contributes to a beers flavour is either:
Copper (e.g. Fruity, Sweet and Smooth) the more rounded characters grouped on the left hand side OR
Green (e.g. Hoppy, Sulphury, Bitter and Carbonated) balancing characters, grouped on the right hand side.
Adding all the Copper values on one side and Green values on the other indicates the Flavour intensity of each, and the level of balance in the beer. A difference of <5 between Copper and Green totals is relatively balanced. Where the totals are the same, the beer is perfectly balanced.
Flavour intensity and balance of a beer are NOT measures of how good a beer is. That may only be judged by the flavour perception and individual tastes of the person drinking it. ALL BEER's aim to to provide useful information, to help you decide which beers will suit your tastes.
